If you pick up a health/heart token (normally outside a hospital), you will regain health (in exchange for cash).
You should also regain a bit of health if you enter an ambulance.
You can also boost your health beyond 100 if you pickup a hooker at night in a sports car and drive to a secluded area (costs money).
