Your dog can learn all the basic tricks plus about 5 or 6 other ones, people have listed the other ones below somewhere, and the fireman's hat is just an item you find on a walk. You just find it randomly when walking. I got it when I had two dogs so quite early in the game, but it can take a long time.
If you here a Fire Engine immeditly go a walk. Try to go through all boxes one of them should be a firemans hat.

Your dog can only learn a maximum of 14 tricks but there are more than that due to the left and right versions
