When you finish with all of stickers and win game , does game take all the extra stickers also?

Your stickers will be converted in to stars in the Vault. The stickers will be lost when you enter the 2nd album, but your stars will remain.
My experience has been on both side of exchanging gold for non-gold. It comes from normal sends if I send a normal, gold sends if I send a gold.
Yes your doubles get put in as vault stars and you have to start again now sticker's.
