You can pull the levers simply by jumping towards them (Link automatically grabs on), there are a few that won't pull down right away, after grabbing them, put on your iron boots to give more weight to get them down. Hope that helps you!

Just run off the edge, you'll automatically jump, grab the lever and pull it down...

There are two kinds of switches: the kind you can just jump onto and the kind that you have to grapple onto. There may also be some that, once jumped onto, don't even go down--use gravity to your advantage with iron boots.
