If you're talking about Bowser in the Palace of Shadow, it's actually pretty simple. Right before you fight him, make sure you're close enough to level up, like in the 90's or something. Then when you defeat Sir Grodus, you'll level up, regaining all health and stuff. You should easily defeat Bowser.
