Is it possible to continue playing the game after beating Ganon? Like to see how everyone is after I defeated him.

After you defeated ganon you will see the heroic movie and the makers of the game. When this is all over you will return to the start select screen and you can play the game as it was before you defeated ganon.
So this means you can defeat Ganon as many times as you like and you are able to play the game after
