Try west of the castle, there's a hole in a cliff where you can smack Luigi with a hammer to make him go under a fence and into another room. There's a Monty Mole that will give you a Golden Mushroom.

These are very hard to find. There should be one that is given to you in one of the mole minigames. There is also a guy in the Castle Town that wants you to find his pets called Beanlets I think. He will give you a Golden Mushroom after getting them all. The last one I know is given to you after you defeat Fawful the final time.
