All Choice Pokemon in Pokemon Yellow?

I'm trying to get a complete Pokedex in Pokemon Yellow by use of the trainer-fly glitch, but I only want to use that for Pokemon that can't be legitimately caught in the game. While sites like Bulbapedia have a reliable list of Pokemon that absolutely can't be caught in Yellow, they omit the Pokemon that you have to make choices for and thus can only get one.

For instance, you can get any of the Eeveelutions in the game, so they are all obtainable, but you can only get one Eevee; so, really, you can only get one Eeveelution (without reseting/trading).

The choices I already know about are:
1. Flareon vs Vaporeon vs Jolteon
2. Omanyte vs Kabuto
3. Hitmanlee vs Hitmanchan

Are there any others I'm forgetting? I want to know these before I get far in the game so I can triage which trainers to fight to get the glitch to work for the right Pokemon.

There are two ways to do this but the first option needs you to own either red, blue or another copy of yellow. The first option is to own either red, blue or yellow and choose the Pokemon that you don't have in the the game your trying to beat. For example if you choose the helix fossil in yellow then choose the dome fossil in the other game. To get the eeveelutions you have to restart the other game or if you have gold/silver you can always use the duplication trick to get all three eevees.
