There's 3 maps, the first one, Kino der Toten (Cinema of the dead), is available from the start.
The next, "Five", is available when you complete the game on any difficulty.
The last one, Dead Ops arcade, is available when you get out of the chair in the main menu and go over to the computer, and put in the code "DOA".
Also, if you got the Hardened edition, you get the 4 maps from W@W.

Also, you could try entering the code "3arc unlock" which unlock all available maps such as "Five" and "Dead Ops Arcade".
