First of all get close to the guy and lock onto him. Then hold B and walk up behind him. When you get close enough Altair will pickpocket him. You cannot pickpocket people if they are standing still and watch out because sometimes they stop walking.

Yes lock onto him and slowlt follow the target. Careful to watch the target as they move and back off or slow down when they stop or look around

You lock the target on him, follow him and when you are close press B.

Get behind the target and press A to lock on to him. Wait until they finish talking and get behind him. Press and hold B to pickpocket.

Lock onto him with your lock on button and follow him. When the guy isn't looking, hold B to outstretch your arm. If you get close enough, you'll grab what he has. Make sure he doesn't see you or he'll run to get some guards.
