Does it really matter? You can still kill the jedi if you want to, by using bazooka's or laser cannon like things. They probably figured that if they made it a challenge to kill a Jedi, then you would try harder to play the game. As for why some of the Jedi are virtually invincible...they are Jedi, strong ones at that. Darth Vader, Count Dooku, Mace Windu, they are some of the strongest jedi's/Dark lords, they will not go down easily.

It is probably to make a challenge in the game, you know, other wise it would be to easy. Also, it adds spice to the game, other wise it would just be another one of those shoot em up games.

Well considering the Jedi do have the Force and so killing them with guns, rocket launchers and what not is always going to be difficult so therefore the only other real method is knocking them out of control into the air and off the platform or crushing them.....
So in short they are virtually invincible anyways.
Besides, it's a planetary bonus and bonuses are meant to be like "special".

I think it's because if they made them die easily you wouldnt want to have one as much/ you wouldnt "fear" them lol
