While you are playing a game you can't.
The only way to change it is beginning a new game.

You can unlock professional difficulty by finish the game on normal mode.

When you first start playing, the difficulty should be set on normal, beat the game on Normal, and you will unlock the Professional difficulty. If you have the PAL version, then apparently, there is an easy difficulty, but I doubt that you have it.

You can't change the diffuculty unless you re-start the game.

Only if you complete the game on normal mode you can open pro mode.
You can change it on starting a new game.
