So I'm planting the crops in the Sacred Land. Since some vegetables grow faster then others do I harvest them when they're ripe? Or do I just leave them there and wait for all of them to ripen?

You should be ok harvesting them whenever they are ready. I've never had a problem doing so. It should take about 8 game days, at the latest, for all the produce to be ready to harvest.
