If you trade Boldore to evolve him, then wont the other player get the evolved Boldore (Gigalith)

Yes, this is true. That's why the only way to obtain a Gigalith is by Trade.
You could always trade for it back, but you'd have to ask the other trainer in advance.

You can also evolve it by putting it to the normal GTS and make sure you put something ridiculous for the Pokemon you are 'looking for' so it doesn't get traded. Then take it off and it will evolve.
