How do you change shaymin from land form to sky form???

Before you can change Shaymin's Form, you must defeat the Elite Four. After that, take Shaymin to the Pokemon Center in Lacunosa Town. If you show it to one of the people in the Pokemon Center, she will give you the Gracidea.

Once you have the Gracidea, go into your Key Item Section of your Bag. Click on the Gracidea, and then click on Shaymin. Shaymin should transfer from Land Form to Sky Form.
