Push the Start Button and find it on one of the Screens - it's on the right hand side, highlight it and activate it; the enemy health meter will appear above their head, but it's very small and hard to read (you don't need it; I don't use it)...

Use L-targeting. Bosses will automatically show their health

Push the start button and go to the stats menu, go over to it and select equip. It will appear as a red bar above the enemy, but it won't work on bosses.
