Is there a way to get more than one sun stone? How about thunder, water, and moonstones? I have 2 fire stones and 3 leaf stones, already. BTW, if you have any idea what Pokemon I should use them on, I would appreciate the input. PLZ n THX!

In sapphire you only get 1 Sun Stone, since you can't find in this game Solrock, then you can't use Thief or Covet to probably steal a Sun Stone from one of them.
For the Fire, Water and ThunderStones, you find some red, blue and yellow shards to trade for a stone in the game. There are more than one so you could make evolve lots of Pokemon with them. You trade them on Route 124 from a blond guy in a house. As for the Moon Stone I have no idea where you could find more than one in this game.
The Pokemon that evolve with the stones and that are catchable in the game are:

Vulpix (Fire Stone) -> Mt. Pyre (outside in the grass)
Staryu (Water Stone) -> Lilycove City (fish with Super Rod)
Lombre (Water Stone) -> Evolve Lotad (Lotad is found on route 114)
Pikachu (Thunderstone) -> Safari Zone (Area 1 - Near the entrance)
Gloom (Leaf Stone, Sun Stone) -> Evolve Oddish (Oddish found on routes 110, 117, 119, 120 and 123)
Jigglypuff (Moon Stone) -> Route 115 (Surf north to where a black belt guy is walking around a bush of grass)
Skitty (Moon Stone) -> Route 116
