Every time I try to hatch a Sudowoodow egg It doesn't hatch into Bonsly, why not?

Because Bonsly was not programmed into Emerald. In fact, its English name was unveiled a month after its American release!

Bonsly is a 4th generation Pokemon and the games for it are not coming out until sometime in december.in other words bonsly doesn't exist yet.

You will not be able to hatch it into bonsly because he is one of the brand new pokemon.
