Well how far you go down in the mines depends mainly on how many of those red power berries you have (you can see by going to the thing by the memo page). If you have a lot you can build up more fatigue before turning blue. It will also help if you bring a few bodigizers and turbojolts, those will help regain stamina and fatigue.

You need to save when you enter the mine, dig for the stairs, load the game again and then go straight to where the stairs are, then do this on every level.

If you save right before you start digging then find the spot to go down to the next floor then load your game and find that spot then dig there keep doing that until you reach your destination.
