Helicopter: use the left stick to move forward. I would advice you to gain altitude first by pressing a. To lower yourself press x or b. Cant remember right now. Use the RB and LB buttons to rudder (TURN) your self. If you use the left stick it will sway the helicopter instead of turn.
Plane: press a to speed up then press up with the left stick to start to fly. Continue pressing a to stay in flight. Use rudder buttons like helicopter. Same results with left stick
To fly a plane on Xbox 360 hold a and move right stick down to go up
