How do you switch dead eye mode from casual to expert?

I'm guessing you mean the lock on modes.
In Single, you will have Dead-Eye version 1 (Go in, aim, shoot) until Mexico, where you get V.2 (aim at a part, marks down for shooting) and then I think some time in West Elizabeth you get V3 (Press another button to mark where you want to shoot).
This progression of the game is the only way to get different Dead Eyes, and you can't switch.
In Multiplayer, it's always V.2
For standard aiming modes, just switch them in the menu.
You don't - the mode just behaves differently depending upon the difficulty. On casual it allows you to lock on to targets, on expert it does not do that.
