How come it wont let me play defense or special teams goes to some simulation everytime I'm playing in offline career mode please help

Because you're only playing as one guy, not the whole team. So if you're player isn't on a certain play (say a RB that's not used on 3rd down) you will be taken out of the game and the game will simulate until the next time he enters the game.
In career Online (my actions) we cannot get the game to play (online). When the system starts to connect it exits out and says it cannot play the game. Have tried everything cannot work.
