It might be on the last level, that's probaly what you have to do. Or it is on one of the mini games after you do 4 mini games.
The preview of the game has no relation to the actual gameplay in this game. Rayman is a party game composed of numorous minigames that everyone can take part in playing and the preview of this game where Rayman battles all of these rabbids does not exist whatsoever in this game.
You're probably thinking of the "hunting" minigames. You have to beat at least 3 of the 4 minigames in each level, then go through he big gate when it opens
