How do you catch the huge fish 30 poinds and up it is like the line is too weak to actually reel the fish in I have caught several 40 pound 71 pound etc. And I can hook them but they always get away

Sometimes you just have to give the fish slack by not reeling in constantly... Do not let the fish swim too far to the side of the screen otherwise your line will break every time. My best fish in the game is 212 lb. Flathead catfish.
You have to go to your tackle box and select a different type of fishing line. One with more strength.
Like they said above use stronger line from your tackle box give the fish some slack and don't reel constantly my biggest fish in the game (256 pound sturgeon) was caught on 10 pound test by using theses skills although I will admit it took about 10 min to bring in.
