Is there a way to check what star rating we are in each race?

As you select a cup in each race cc, there is a window at the bottom of the screen that tells you what place you got and the rating

Yes and No.
You can't see your Star rank on a Cup, but if you go to your Records in the Liscence, you can look at your Overall Rank. This shows the Rank you have the most of.
Ex: If an A, you have more As than Bs or Cs or Stars... E.t.c...
