Is there anything that unlocks after you beat all the Nintendo ghosts in the star cup?

Not the Star Cup itself. You get stuff by doing a certain amount of ghosts. For example:
Unlock 4 fast staff ghosts to get Funky Kong, 8 for Baby Luigi, 16 for Birdo, and 32 for Toadette
Note: You have to beat the ghosts by 7 seconds at least to unlock the fast staff ghosts
