When you are in the air (after you have driven on the boost shinny thing) move the wheel left, right, up or down to preform a trick.

Shake the Wii Wheel when you are in the air, and to be more specific, off a ramp. Whether it is a boost ramp or just a regular ramp, you can do tricks off of it. Also you can't do tricks off launchers, like the barrel blaster in DK's Mountains (both snowy and the one with a volcano).

Pull up on the wii wheel but if your useing the gamecube controller use any direction on the d-pad!

If you have a wii remote you have to shake it to do a trike if your on the ground shake it once to do a wheely

It has to be off of a ramp, be it natural (a hill) or man-made (a boost ramp). And to do it, it depends on what you use to drive.

Wii Wheel-shake it towards and away from you.
Wiimote/Nunchuk-shake it up, down, left, or right
Gamecube Controller-hit the directional buttons left, right, up, or down.

With the Wii Wheel, I find it easiest to give it a sharp jerk back and forth twice. Usually that registers more often than just shaking it .

When you are in the air (By Hill or Boost Ramp or even Red Mushroom) jerk back the controller once as soon as you are in the air. You will hear a ping and you character will flash gold for a sec and then he will do a trick. And after that you will get a small speed boost after the jump.
