When you adopt a pet and you no longer want them can you let them go back to the wild???

No, you can not release them back into the wild. You have to keep it.
No you cannot let them go. It is your responsibility you were the one that wanted it. But the animal dies by neglect or age.
You can get one more animal than the level of your house (ex: level 3 house, try to adopt a 4th pet and replace the one you don't want) it will go back into the wild and go back to 3 hearts. But you always have to have at least one pet once you've adopted one.
