Turn off 'Vehicle Roll Helper' in the 'Gameplay Settings' menu and then try to flip the vehicle over so it lands on it's roof which can be done by driving off a cliff. Air time is determined when your tires are not touching the ground so doing this should make earning the 'Maximum Air' trophy easier.
