It's quite simple actually.
Get a repeater, like Henry's repeater, or Evan's Repeater.
Then, go to a town, and aim your weapon at someone and they will draw their weapon.
Go into deadeye, and shoot their weapon.
Also, going into Deadeye automatically reloads your weapon, but it doesn't count for the Challenge.

Get a gun with more than 6 rounds, preferably the mauser. Go into a saloon, aim your gun at someone. Everyone will now be aiming at you. Then, enter dead eye, and disarm them. Dead eye rank 3 is greatly helpful.
