After you buy Add-Ons they are always on your console, they aren't connected to your Profile in anyway, so if you accidentally erase progress you wont lose the add-on.

If you bought The Ballad of Gay Tony, or The Lost and The Damned, then go to the menu and select New Game, then select which game. If you have a saved game, go to load then select the save.
