To play has a jedi has all the time, you don't play the story, you play quick match and will be able to play as a jedi. Hope this helps.
The only way to be Jedi ALL the time is to do the Map Mos Eisley and do "Assault", it will be jedis vs jedis.
You can do that, but here are was to make you stay a jedi for a whole battle. Don't kill any team members, it will take 5 seconds way. Don't capture cpus unless you have a lot of time. To see the time, look a the lightsaber. Kill the other teams. Don't die. AND don't WASTE ANY TIME.
You can go to instant action and adjust the hero settings and adjust it to best player than needed points to 1 then the time it will be available again to 1 second it kind of takes away the fun but it works
