What do you do with the dragon eggs once you have a full set of ten of the same eggs?

You don't need to do anything with them, they just unlock things:
The Ember Set unlocks Ember as a playable character.
The Flame Set unlocks Flame as a playable character.
The Spyro Set unlocks all the Spyro mini-games to play.
The Sparx Set unlocks all the Sparx mini-games to play.
The Blink Set unlocks all the Blink mini-games to play.
The Sgt. Byrd Set unlocks all the Sgt. Byrd mini-games to play.
The First Set unlocks concept art for the game.
The Second Set unlocks a character viewer for the game.
