I think you just right click, and there should be an option that says you can name it.

I don't remember much from when I had Zoo Tycoon 1, but I think that's the game you can name the exhibits. You can't on ZT2.

You can't on ZT2 only on the first one

Exhibits can't be named in Zoo Tycoon 2. They can be named in the original though.
