Yeah they seem like a good match. Just teach them strong moves, give them a lot of gummies and level them up. Keep reviver seeds and others items handy though when you do battle a boss. Unless your a high level no matter what team you have you'll need items.

To be honest, the best matches involve water and psychic moves, because most bosses will be ghost, psychic or ground. Mudkip seems like a good one, but you might want to use Riolu instead of Munchlax, because he can learn all psychic moves.
