In diamond version when you breed Pokemon together does the egg have different stats than it would normally have? Like if I breed something with a male Blissy will the offspring have a higher health?

No, the Pokemon will have the stats that that Pokemon is normally supposed to have. But you can get egg moves that it normally couldn't learn.

Well it mainly depends on the Nature. The nature it has depends on what it's better at than other stats. Like with the Timid nature, speed of Pokemon are raised and attack is lowered. Try expirimenting with the natures. Hope this helps you out.
