Does anyone happen to know how the heck you get past your ability limit with characters (like Rukia with her 2nd dance) to get the skills "AFTER" max?
I've looked all over, and have found nothing that would help me in the matter.
Also, I can find no AR codes that will let me go past it.
What should I do?

In order to get Rukia's second Dance skill you need to upgrade her Zanpacuto by selecting the upgrades in the Middle row until you reach it. However, if her second Dance skill has gone passed the "MAX" Icon, then you won't be able to teach her the second Dance. Hope this helps.
