I'm about 80% through the game. But these huge quivering purple blobs hanging from the ceiling and other walls in grey hedge crossing have coolness written all over them. Do that have a purpose? How do I react them?

Once you have learned the dragon claw spell these blobs can be grabbed with the spell to pull you up onto higher ledges or cross larger gaps.
After you pass through the great caves, you will unlock a spell called "dragon's grasp". The purple blobs can be used to swing across gaps with this spell
