My recommendation is to have 3 scaredy-shrooms in the back, 2 fume-shrooms in front of the scaredy-shrooms and cover the furthest plant to the right with a pumpkin. (If you want you can use gloom-shrooms which are put onto fumes,which attack in 8 directions but have a very short range of about 1 tile/space)
