I'm 50% done with Career mode and no matter how few seconds my can goes from 0-60, I can never take off as fast as my opponents, in any race. How can I start the race as fast as the computer cars?

They are always using a better car then you are. That's why you need shortcuts to take them out. Once you have money, upgrade your car for better control and speed.
Not only are the opponent cars better than yours, even if you have the best car in the game, and it is fully upgraded, the opponent cars will always accelerate faster than yours, it's to make it a challenge even if you have the best car.
I 368 star and 3,000,000 money and level 60 but now no start faster than other and my times is over 3.30
If you get a fully upgraded Pagani Zonda Cinque and use your boost at the start, you will pass all but the first and second cars. Sometime you can pass a couple off the line without the boosts.
