Dribbling isn't easy at all. There's a lot of things that influence the way you dribble like player traits or the level of dribbling they have. In PES dribbling is very situational, being easier to dribble through defences if the opposition runs towards you. If you try to go past a defender that is "stopped", sort to say, then you'll pretty much get tackled 8/10 times. If you know some skill moves tho, you might notice it feels a bit stiff and sometimes it the input you make won't work, for that you can disable the automatic skill move/ dribbling in the options and put it to manual. That way it will feel like it flows better. And if you are looking to do skill moves the best thing you can do is look up tutorials on yt.
