How do you save the game? I have a switch and I am playing this game first time and my game was remove from my console and I had to over so I need to know how to save the game.

The game auto saves. When you hit checkpoints, I.e. The torches on the islands light up and when you complete cut scenes it will save for you.
The game autosaves at multiple points. On the islands you may notice several braziers shaped like dragons that light up when you get close, these are autosave locations. It will also save at the beginning of each ruin, the room just before a boss fight, and anytime you land on an island. It may also save when you take to the sky, but I'm not 100% sure.
