I have 2 speed apparatuses, but I can't use them anymore because it says I need stars from star island, which apparently no longer exists. So, where can I get stars now?

You get stars from daily gifts, Winter and Easter sets. You also get them from Diamond Eye, which is IMHO the best place to get them. Remember that for each Diamond Eye you need 20 amethysts.
Before you ask: Winter and Easter sets can be get from themed island which pop up on the bottom right once in awhile.
