I need honey (8) jars of it. Can anyone help me out?

Honey is rather easy to get when you know what to do.
The only way I know how to get it without cheats/hacks is to unlock the Beehive Blueprint at Rebecca's shop. I don't remember how to unlock it, sadly, but it's easy to make as long as you have a few honeycombs. Be sure to build at least four to get more honey and have some (Western) Honey Bees to put inside.
You cannot use beehives during winter, but you can every other season. It takes around 5 days to get 1-3 honey jars (if you have unlocked perfume, which I have no idea how to get just yet, you can spray the beehives to make the honey worth a bit more temporarily. Other times, mainly if you use the pink Western Honey Bees, you get Flower Honey, which is worth more).
After you build a few beehives or so, you unlock a new festival just for honey-related items.
I hope this was helpful; if I find out more then I'll post here again.
