Okay this might sound stupid but it is a great tactic grab a hockey stick from the sports shop and hide behind one of the pillars make sure the bottom of the hockey stick is aiming at Carlito keep shooting the pucks at him and it will eventually defeat him hope this helps ;)

Go on the other side of the walkway were carlito is not on. Get to the wepon shop. Get a katana and some battle axes. Throw the battle axes and get more axes, throw them at carito and repeat.
The wepon store is greenish brown. It has two windows and a see through door.
