The invincibility Red Hat is in Calypso's hut inside a chest that only Blackbeard can open. The Hut is located on the far side of the area that you unlock on the left hand side of Port Royal hub. When you have enough gold bricks to unlock the gate on the left, go through and go as far to the left as you can. You will see a small lake with a bridge that has collapsed into the water. Again, if you have enough bricks to build the start of the bridge, roll across with a barrel (behind the well, against the building) and roll into the spot for the barrel. Rolling the barrel here will open the door and inside the room there is 2 Red Hats to find, but the Invincibility one is located in the back corner in a chest that only Blackbeard can open.
