I personally find Gypceros one of the easiest the defeat due with a great sword, this is due to his two weak spots (head and tail) so easy to repeatedly hit. I've even killed a hard Gypceros on a guild hall gathering quest with a thunder attribute weapon, but when fighting one try to use a fire attribute weapon or a raw damage weapon of 700+ attack power.

If you cannot get one then vile serpantblade should do the job, he is easy enough to beat when you aim for his very weak tail. If you can't aim for the head, I aim to hit him facing his body so you can bounce of his hard underbelly if you gone in too far and then you bounce back until you hit his tail or head, he flinches a lot when doing this.

Leave him alone and observe the rage run path he takes when he runs around to see where he finishes this run (which will always be the same in an area) so you can start hitting him again after he's ran. This also means you won't get hit by hit poison when he's running.

He gets angry easily when close to death so just keep fighting until he goes down. If he fakes death then just aim for his tail trying to keep yourself away from his body so his surprise (and very powerful) attack doesn't hit you. When I do it he usually fakes death again straight after I hit the tail so I just get free hits.

Just go for the tail for an easy kill, block his flash attacks so you don't get stunned and everything should be fine. Bring antidotes or just a Poison Negating armour (ioprey, + or S).
