How to cut off body parts

Im just wandering how to cut off body parts like a tail off. I have a Sentryu Raven with blue sharpness but I never cut off there tail when I try. Thx for helping.
Comment:(May 11 2008) I mean when the monster is still alive. I know how 2 carve it.

The only way you can cut something off is to go up to them and press the 0 button when you have your weapon unequipted. You will bend down and take out a knife and carve out something from the monster.

Alright try this on the rathalos because he leaves his tail wide open when he lands. Its simple to cut off his tail but you will have to attack the tail for quite awhile and the village quests don't have many wyverns that will liove long enough to take off their tails. So simply go on a rathalos quest(in guild hall will make it easier to cut it off)and when he flys up wait for him to come down then get behind him and his tail should uncurl just outside of the gust zone so hit it hard and fast,and other than hitting him when he lands just attack towa rds the back in general during the fight.Keep trying it takes a bit to pull it off.
