After you knock all of vamps life of stamina it takes him a couple of seconds to get up. Well while he is on the ground equip the syringe that naomi gave you near the end of act two and when vamp gets up you are temporarly able to grab him with your CQC of the R1 button and when you have the syringe equipe the icon that normal appears red for slicing an oppenents throat will now be yellow with the syringe indicator in the bubble. This will stab vamp with the syringe and make him mortal.

During the fight equip the seringe that naomi gave you then fight vamp until is energy ends,grab him from behind when he gets up and use the seringe in him if you do this you will win.

Equip the syringe then "kill" him once and when he gets up hold R1 and get him in CQC then push triangle. Once you got him with the syringe he should die, if he don't then shoot him to death.

Use the syringe to stop Vamp from regenerating, equip the syringe and grab Vamp after you have taken his life down at least once otherwise he will break your hold then press triangle to inject him with the syringe.

First, equip the syringe. Then use a tranq gun to drain Vamp's stamina. Then when he passes out, get behind him, quickly. When he gets up, CQC him, and press triangle. Done!
