According to Metal Gear Wiki on Wikia.com, Both the Gekko and the RAYs have synthetic muscle tissue to provide a more fluid field of movement. The red liquid is not called blood outright, but does coagulate (scab up) like regular blood. Makes you wonder how Laughing Octopus pukes ink. Also, there is no reason that blood should spurt out when Raiden stabs them in the head. No need to coagulate metal. But, this is the game series where one guy's mind is taken over by a transplant arm. What are you going to do?
